Joc's Dish

Jocelyn is always on the hunt for new recipes and to my advantage, loves to share them. I asked her to guest post on The Crawford Clan with a recipe worth sharing to all my followers...all 7 of you:)
She works fulltime, styles herself like she's working for Rachel Zoe, and has a three year old. Seriously, how do you find the time to look for new recipes? She does the dirty work and my family doesn't mind!
(taken about this time last summer on an impromptu night out at our favorite bar, Delux...we need to schedule a GNO there stat)

The recipe was easy to prepare, healthy and quite filling (I could only do 1 taco!), we even had plenty for leftovers for lunch today too.


Spice-Rubbed Chicken & Vegetable Tacos with Chipotle Cream



The longest part of prepping was the cutting of the veggies, but the rub took no time at all. I served with grilled red skin potatoes (instead of rice). The chipotle cream is a little spicy, so might add a little less next time.

Definitely a keeper and would be good to make for a crowd. The only thing missing were the Corona’s!




Ingredients

  • 1 1/2 cups sour cream
  • 1 tablespoon chopped canned chipotle chiles (about 2)
  • 2 tablespoons (packed) golden brown sugar
  • 1 tablespoon smoked hot Spanish paprika
  • 2 1/4 teaspoons chili powder
  • 1 1/2 teaspoons coarse kosher salt
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 2 small zucchini, quartered lengthwise
  • 1 red & orange bell pepper, seeded, cut lengthwise into 3/4-inch-thick strips
  • ½ onion cut up into strips
  • 2 tablespoons canola oil
  • 1 pound skinless boneless chicken breast halves, each halved horizontally
  • Corn or Flour tortillas


Directions

Prepare barbecue (medium heat).


Whisk sour cream and chipotle chiles in small bowl; season with salt.


Stir brown sugar and next 5 ingredients in another small bowl to blend for spice rub.


Place zucchini and bell pepper on rimmed baking sheet. Drizzle with canola oil; toss to coat. Sprinkle spice rub over both sides of vegetables and chicken.


Place chicken and vegetables on barbecue. Grill until vegetables are tender and browned in spots and chicken is cooked through, turning occasionally, about 5 minutes. Transfer to work surface; cut chicken crosswise into 1/2-inch-thick strips. Cut vegetables crosswise into 3/4-inch pieces. Place chicken and vegetables in large bowl; toss to blend.


Place chicken and vegetables and chipotle cream in tortillas.

Weekend Schmorgishborg

Our weekend was busy, but great. Its actually my favorite kind of weekend. A schmogishborg of fun and chores. The kind where you are up and at 'em and can't believe what you've accomplished by noon!
(not to be confused with up and Adam, which is what I thought my mom was telling us growing up. I always thought, "who is Adam and why is he getting up so early?")

We checked a ton of things off the to do list. Things that had been lingering week after week, but also enjoyed some fun with friends and the kids.
We got to meet Tyler Windtberg on Friday and he is just adorable. He has beautiful blue eyes that I could just stare at all day and we love that our two boys are basically the same age.
Kristi and I have so many great memories from MSU and its probably a long shot but William and Tyler would make great fraternity brothers. I see ice luges and tailgates in their future!
Our summer planting is done, the bushes are trimmed,
the patio furniture is out and the cocktails were in hand. Cheers to our first happy hour of the season!
Ahhhhh, doesn't this look refreshing after a day of yard work?
Someone decided that the potting soil belonged in her pool.
And we enjoyed another summer favorite, grilled corn on the cob. I love it so much I've become a cob snob and really won't eat it any other way. Recipe here. We've never done the butter, just the grillin.
We treated ourselves to to a nice walk and ice cream after completing all our errands, going to church, yard work, grocery shopping, and various other miscellaneous to do's. This phantom walker is Lauren insisting on pushing her stroller. And I will also add that this girl RAN, yes RAN a half mile to get the ice cream and ran almost the entire way home. Crazy!

She has a new found obsession with Superman so we had to get her Superman ice cream.
And this guy is a SMILIN fool. It happens all the time and Billy witnessed his first little laugh last night too.
The coos are starting and more and more each day he is responding to you.
I love the way their little personalities start to unfold.
